Oven-Roasted Citrus-Glazed Salmon & Vibrant Vegetable Medley



Ingredients



For the Salmon
- 4 salmon fillets (about 6 oz each)
- 2 tablespoons olive oil
- 2 tablespoons brown sugar
- 1 tablespoon lemon zest
- 1 teaspoon smoked paprika
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 lemon, thinly sliced

For the Vegetable Medley
- 1 cup green beans, trimmed
- 1 zucchini, sliced into half-moons
- 1 cup snap peas, trimmed
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 6 asparagus spears, trimmed and cut into thirds
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper

Instructions



1. Preheat the Oven
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.

2. Prepare the Salmon Marinade
In a small bowl, combine olive oil, brown sugar, lemon zest, smoked paprika, sea salt, and black pepper. Stir until well blended to form a paste.

3. Marinate the Salmon
Place the salmon fillets on the prepared baking sheet. Rub each fillet with the marinade, ensuring an even coating. Allow the salmon to marinate for 10 minutes.

4. Arrange Lemon Slices
Place thin lemon slices on top of each salmon fillet. This adds moisture and a citrusy aroma to the fish during roasting.

5. Prepare the Vegetables
In a large bowl, combine green beans, zucchini, snap peas, bell pepper, broccoli, asparagus, and cherry tomatoes. Drizzle with olive oil, then season with sea salt and black pepper. Toss until all the vegetables are evenly coated.

6. Roast
Arrange the prepared vegetables around the salmon on the baking sheet. Place the sheet in the preheated oven and roast for 18-22 minutes, or until the salmon flakes easily with a fork and the vegetables are tender and slightly caramelized.

7. Rest and Serve
Remove the baking sheet from the oven and allow the salmon to rest for 3-5 minutes before serving, allowing the flavors to meld.
