Spicy Citrus Chicken Fajitas with Pico de Gallo & Guacamole



Ingredients



For the Chicken Marinade:

- 1 ½ lbs chicken breast, thinly sliced
- ½ cup orange juice
- ¼ cup lime juice
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 2 tablespoons Worcestershire sauce
- 3 garlic cloves, minced
- 2 tablespoons avocado oil

For the Fajitas:

- 1 tablespoon avocado oil
- 1 large onion, sliced
- 2 bell peppers (1 red, 1 yellow), sliced
- 1 jalapeño, thinly sliced
- Salt and black pepper to taste
- 8 small flour tortillas
- ½ cup cilantro, chopped

Toppings:

- 1 cup pico de gallo
- 1 cup guacamole
- ½ cup sour cream
- 1 cup shredded cheese (cheddar or a Mexican blend recommended)
- 1 cup shredded lettuce

Instructions



1. Marinate the Chicken:
In a large bowl, combine orange juice, lime juice, chili powder, cumin, Worcestershire sauce, minced garlic, and 2 tablespoons avocado oil. Mix well. Add the sliced chicken, coating it thoroughly in the marinade. Cover and refrigerate for at least 1 hour, up to 4 hours.

2. Prepare Vegetables:
While the chicken is marinating, slice the onion, bell peppers, and jalapeño. Set aside.

3. Cook the Chicken:
Heat 1 tablespoon of avocado oil in a large skillet over medium-high heat. Remove the chicken from the marinade, shaking off any excess liquid. Pan-fry the chicken slices for about 6-8 minutes, until fully cooked and browned. Remove from the skillet and set aside.

4. Cook the Vegetables:
In the same skillet, add a little more oil if necessary. Sauté the onions, bell peppers, and jalapeño together with a pinch of salt and black pepper. Cook for about 5 minutes, until the vegetables are soft but still vibrant.

5. Combine Chicken and Vegetables:
Return the cooked chicken to the skillet with the vegetables. Cook for an additional 2 minutes to combine flavors, then sprinkle with chopped cilantro.

6. Assemble the Fajitas:
Warm the tortillas on a dry skillet or microwave for a few seconds. Fill each tortilla with the chicken and vegetable mixture.

7. Add Toppings:
Top each fajita with a spoonful of pico de gallo, guacamole, sour cream, shredded cheese, and lettuce as desired.
