Refreshing Beet & Ginger Juice with a Citrus Twist
Ingredients
- 2 medium-sized beets, peeled and diced
- 1 large lemon, juiced
- 1-inch piece of fresh ginger, peeled and sliced
- 1 medium cucumber, peeled and chopped
- 2 medium carrots, peeled and chopped
- 1 medium apple, cored and sliced
- 3 cups water
- Ice cubes for serving (optional)
Instructions
1. Prepare Ingredients: Start by peeling and dicing the beets, then peel, slice, and prepare the remaining fruits and vegetables. Ensure all pieces are small enough to fit in a pot comfortably.
2. Cook Beets: In a medium-sized pot, add the diced beets and 3 cups of water. Bring to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about PT20M (20 minutes), or until the beets are tender when pierced with a fork.
3. Blend Ingredients: Remove the pot from heat and let the beets cool for about PT10M (10 minutes). In a blender, combine the cooked beets with the beet cooking water, lemon juice, ginger, cucumber, carrots, and apple. Blend on high until the mixture is smooth.
4. Strain Juice: Place a fine-mesh strainer over a large bowl and pour the juice mixture through the strainer to remove any pulp. Use a spatula to press the remaining pulp in the strainer to extract as much juice as possible.
5. Serve: Pour the strained juice into glasses over ice cubes if desired. Stir well before serving to ensure the flavors are well mixed.
6. Store: If not consumed immediately, store the juice in an airtight container in the refrigerator for up to two days.
