Ingredients



For the Pancakes:

- 1 tablespoon baking powder

- 1 cup dairy-free milk

- 1 tablespoon maple syrup

- 1 teaspoon vanilla extract
- Nonstick cooking spray

For the Banana Topping:
- 2 ripe bananas, sliced
- 2 tablespoons maple syrup
- 1 tablespoon plant-based butter

For the Berry Salad:
- 1 cup mixed berries (e.g., strawberries, blueberries, raspberries)
- 1 tablespoon maple syrup

For the Coconut Cream:
- Vegan whipped coconut cream (store-bought or homemade)

Instructions



1. Prepare the Pancake Batter:
- In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and cinnamon.
- In a separate bowl, combine dairy-free milk, sugar, maple syrup, olive oil, and vanilla extract. Stir until the sugar dissolves.
- Slowly pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix, as this can result in dense pancakes.
- Allow the batter to rest for 5 minutes to activate the baking powder for fluffier pancakes.

2. Cook the Pancakes:
- Heat a nonstick pan over medium heat. Lightly coat with nonstick cooking spray.
- Pour 1/4 cup of batter onto the hot pan for each pancake.
- Cook for about 2-3 minutes, until the edges look set and bubbles form on the surface. Flip and cook for an additional 2 minutes, or until golden brown and cooked through.
- Repeat the process with the remaining batter, keeping cooked pancakes warm in a low oven if desired.

3. Prepare the Banana Topping:
- In another pan over medium heat, melt the plant-based butter.
- Add the sliced bananas and 2 tablespoons of maple syrup. Stir and cook for 2-3 minutes until the bananas are caramelized and syrupy.

4. Assemble the Berry Salad:
- In a small bowl, toss the mixed berries with 1 tablespoon of maple syrup.

5. Serve:
- Stack the pancakes on a serving plate.
- Top with caramelized bananas, a generous spoonful of berry salad, and a dollop of vegan whipped coconut cream.
- Drizzle additional maple syrup over the top, if desired.
