Zesty Grilled Shallots with Herb Vinaigrette
Ingredients
- 6 medium shallots, peeled
- 2 tablespoons rice vinegar
- 2 tablespoons seasoned rice vinegar
- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon fresh tarragon, finely chopped
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon olive oil
Instructions
1. Prepare the Grill:
- Preheat your charcoal grill for indirect grilling. Allow the coal to turn white and bring the grill surface to medium heat.
2. Prepare the Shallots:
- Peel the shallots and cut each in half lengthwise. This will ensure even cooking and a wonderful caramelization.
3. Grill the Shallots:
- Brush the cut sides of the shallots with olive oil to prevent sticking.
- Place the halved shallots cut-side down on the grill.
- Grill for about 10-12 minutes, turning occasionally, until the shallots are tender and charred around the edges.
4. Make the Herb Vinaigrette:
- While the shallots are grilling, whisk together the rice vinegar, seasoned rice vinegar, chopped parsley, chopped tarragon, and freshly ground black pepper in a small bowl.
5. Finish and Serve:
- Remove the grilled shallots from the grill and place them in a serving dish.
- Drizzle the herb vinaigrette over the warm shallots.
- Serve immediately as a refreshing, aromatic snack.
