Spicy Tomato and Garlic Confit with Herbs
Ingredients
- 2 lbs tomatoes (preferably Roma or vine-ripened)
- 1 cup olive oil
- 6 cloves garlic, peeled and thinly sliced
- 1 medium onion, finely chopped
- 1 teaspoon red pepper flakes
- 1 teaspoon gochugaru (Korean red pepper flakes)
- 2 teaspoons dried oregano
- 1 teaspoon freshly ground black pepper
- 1 1/2 teaspoons sea salt
Instructions
1. Prepare the Tomatoes:
- Begin by washing and drying the tomatoes thoroughly.
- Slice each tomato into quarters and set aside.
2. Heat the Olive Oil:
- In a large skillet, add the olive oil and heat over medium-low heat.
3. Cook the Aromatics:
- Add the thinly sliced garlic and chopped onion to the heated oil.
- Sauté the garlic and onion, stirring occasionally, until they become fragrant and translucent. This should take about PT5M (5 minutes).
4. Add the Tomatoes:
- Gently add the quartered tomatoes to the skillet, ensuring they are evenly distributed in the oil.
5. Spice it Up:
- Sprinkle the red pepper flakes, gochugaru, oregano, black pepper, and sea salt over the tomatoes.
- Stir gently to combine all ingredients, ensuring the spices are well-mixed throughout.
6. Simmer the Confit:
- Reduce the heat to low. Allow the mixture to simmer gently, uncovered, for PT45M (45 minutes).
- Stir occasionally, and press the tomatoes down gently with the back of a spoon as they soften, ensuring they release their juices and incorporate well into the oil.
7. Final Touches:
- Taste the confit and adjust the seasoning with additional sea salt or black pepper if necessary.
- Once the tomatoes have broken down and the oil is richly infused, remove the skillet from the heat.
