Hearty Steel-Cut Oats Breakfast Bowl with Coconut and Savory Additions



Ingredients



- 1 cup steel-cut oats
- 1 cup coconut milk
- 2 cups water
- 1 tablespoon butter
- 1/2 teaspoon cinnamon
- 1/4 cup toasted coconut flakes
- 1/2 cup fresh berries (choose your preference of blueberries, raspberries, or strawberries)
- 4 slices bacon
- 4 large eggs
- 2 tablespoons chopped fresh chives
- Salt and pepper to taste

Instructions



1. Prepare the Oats:
In a medium saucepan, combine 1 cup of steel-cut oats, 1 cup of coconut milk, and 2 cups of water. Bring to a gentle boil over medium heat. Once boiling, reduce the heat to low, cover, and simmer for approximately 20 minutes until the oats are tender and have absorbed most of the liquid.

2. Cook the Bacon:
While the oats are cooking, place 4 slices of bacon in a large skillet over medium-high heat. Cook until crispy, about 4 to 5 minutes per side. Remove the bacon and place it on a paper towel to drain excess fat. Once cooled, crumble the bacon into small pieces.

3. Fry the Eggs:
Drain excess fat from the bacon skillet, leaving a small amount to fry the eggs. Crack 4 large eggs into the skillet and cook for 2 to 3 minutes for sunny-side-up eggs or until the yolk reaches your desired firmness.

4. Assemble the Bowls:
Once the oats are ready, stir in 1 tablespoon of butter and 1/2 teaspoon of cinnamon for a rich, warm flavor. Divide the oats evenly into four bowls.

5. Garnish and Serve:
Top each bowl of oats with 1/4 cup toasted coconut flakes, a handful of fresh berries, a crumbled slice of bacon, and one fried egg. Sprinkle 2 tablespoons of chopped fresh chives over the top and season with salt and pepper to taste.
