Sizzling Green Enchilada Chicken Quesadillas



Ingredients



- 1 pound boneless, skinless chicken breasts
- 1 cup green enchilada sauce
- 8 small flour tortillas
- 2 cups mild melting cheese, shredded (like Monterey Jack or Mozzarella)
- Spray oil or 2 tablespoons of cooking oil
- 1/4 cup fresh cilantro, chopped
- Lime wedges, for serving
- Salt, to taste

Instructions



1. Prepare the Chicken:

- Lightly sprinkle salt on both sides of the chicken breasts.
- Heat a non-stick skillet over medium heat and lightly coat with spray oil or 1 tablespoon of cooking oil.
- Add the chicken breasts and cook for about 6-8 minutes on each side until golden brown and fully cooked (internal temperature should reach 165°F).

2. Shred the Chicken:

- Remove the chicken from the skillet and let it rest for 5 minutes.
- Shred the chicken using two forks, ensuring even, fine shreds.

3. Prepare the Filling:

- In a bowl, mix the shredded chicken with 1 cup green enchilada sauce and 1/2 cup of the shredded cheese.
- Taste and adjust the seasoning with salt if necessary.

4. Assemble the Quesadillas:

- Clean the skillet with a paper towel and reapply spray oil or about 1 tablespoon of cooking oil over medium heat.
- Place one tortilla flat on the skillet, sprinkle about 1/4 cup cheese over half of the tortilla, and add a generous portion of the chicken mixture.
- Fold the tortilla in half to enclose the filling.

5. Cook the Quesadillas:

- Cook each side of the folded tortilla for about 3-4 minutes, pressing lightly with a spatula to ensure the cheese melts and the exterior crisps to a golden brown.
- Repeat the process for the remaining tortillas and filling.

6. Garnish and Serve:

- Once cooked, slice each quesadilla into wedges.
- Sprinkle with fresh cilantro and serve with lime wedges on the side.
