Spicy Albacore Tuna Rice Bowl with Avocado and Fresh Veggies
Ingredients
- 8 ounces Albacore tuna, diced
- 2 tablespoons Kewpie mayonnaise
- 1 tablespoon Sriracha hot sauce
- 1/2 teaspoon freshly ground black pepper
- 2 cups Microwaveable Minute White Rice
- 1/2 cup cucumbers, thinly sliced
- 1 tablespoon sesame seeds
- 1/2 cup carrots, julienned
- 1/2 cup radishes, thinly sliced
- 1/2 cup beets, spiralized or grated
- 2 green onions, finely chopped
- 1/2 cup cabbage, thinly sliced
- 1 ripe avocado, sliced
- 1/2 cup steamed edamame
- 1 egg, hard-boiled and sliced
- 1/4 cup panko bread crumbs, toasted
- 2 tablespoons lime juice
- 1 teaspoon wasabi paste
Instructions
1. Prepare the Tuna Mix:
In a medium bowl, combine the diced Albacore tuna, Kewpie mayonnaise, Sriracha hot sauce, and freshly ground black pepper. Mix well and set aside to let the flavors meld.
2. Cook the Rice:
Prepare 2 cups of Microwaveable Minute White Rice according to the package instructions. This usually involves microwaving for around 5 minutes (PT5M).
3. Prepare the Vegetables:
Thinly slice cucumbers, radishes, and cabbage. Julienne the carrots. Spiralize or grate the beets. Slice the avocado. Finely chop the green onions.
4. Steam the Edamame:
If not already steamed, place edamame in a microwave-safe bowl with a splash of water, cover, and microwave for 2 minutes (PT2M).
5. Prepare the Egg:
Slice the hard-boiled egg into even slices.
6. Toast the Panko:
In a small, dry skillet over medium heat, toast the panko bread crumbs until golden brown, approximately 3 minutes (PT3M). Set aside.
7. Assemble the Bowl:
Divide the cooked rice equally into four serving bowls. Arrange the prepared cucumber, carrots, radishes, beets, green onions, cabbage, avocado, and edamame neatly over the rice.
8. Top with Tuna:
Spoon the spicy tuna mixture over the center of each bowl.
9. Finish with Garnishes:
Top with sliced egg, sprinkle toasted panko bread crumbs, and sesame seeds. Drizzle with lime juice and a dab of wasabi paste.
