Guinness Braised Beef Roast with Vegetables
Ingredients
- 2 tablespoons vegetable oil
- 3 pounds beef chuck roast
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 1/4 cup all-purpose flour
- 4 garlic cloves, minced
- 2 tablespoons tomato paste
- 1 bottle (12 oz) Guinness Stout beer
- 2 cups beef stock
- 2 tablespoons Worcestershire sauce
- 4 sprigs fresh thyme
- 2 large onions, chopped
- 4 large carrots, peeled and cut into 2-inch pieces
- 3 celery stalks, cut into 2-inch pieces
- 4 large potatoes, peeled and quartered
Instructions
1. Preparation:
- Preheat your oven to 325°F (163°C).
- Pat the beef chuck roast dry using paper towels to ensure a good sear. Season with salt and black pepper on all sides.
- Dredge the beef in all-purpose flour, shaking off any excess.
2. Searing the Beef:
- In a large Dutch oven, heat the vegetable oil over medium-high heat.
- Sear the beef roast on all sides until a deep brown crust forms, about 2-3 minutes per side. Remove the beef and set aside.
3. Building Flavor:
- Reduce heat to medium. Add the minced garlic to the Dutch oven and sauté until fragrant, about 1 minute.
- Stir in the tomato paste and cook for another minute.
- Pour in the Guinness Stout beer, scraping up any browned bits from the bottom of the pot with a wooden spoon.
4. Combining Ingredients:
- Return the beef roast to the pot.
- Add in the beef stock and Worcestershire sauce.
- Nestle the thyme sprigs around the beef.
5. Roasting the Vegetables:
- Distribute the onions, carrots, celery, and potatoes around the beef.
- Bring the mixture to a simmer, cover with the lid, and transfer the Dutch oven to the preheated oven.
6. Braising in the Oven:
- Cook for 2.5 to 3 hours, or until the beef is tender and easily shreds with a fork. Stir occasionally to ensure even cooking.
7. Serving:
- Remove the pot from the oven, discard thyme sprigs.
- Adjust seasoning with additional salt and pepper if needed.
- Slice or shred the beef, and arrange with the vegetables on a large serving platter. Pour some of the braising liquid over the top as a sauce.
