Pan-Fried Lemon and White Wine Chicken Thighs with Capers and Mushrooms



Ingredients



- 4 boneless, skinless chicken thighs
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1/2 cup white wine
- 1/4 cup chicken broth
- 2 tablespoons capers, drained
- 1 cup sliced mushrooms (button or cremini)
- 2 tablespoons fresh lemon juice
- 4 lemon slices, for garnish
- 2 tablespoons chopped fresh parsley, for garnish

Instructions



1. Prepare the Chicken Thighs:
- In a shallow dish, combine the flour, salt, and pepper. Dredge the chicken thighs in the flour mixture, shaking off any excess flour.

2. Pan-Fry the Chicken:
- Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
- Add the chicken thighs to the skillet and cook for 4-5 minutes on each side, until golden brown and cooked through.
- Remove the chicken from the skillet and set aside on a plate.

3. Sauté the Mushrooms:
- In the same skillet, add the remaining tablespoon of butter.
- Add the sliced mushrooms and cook, stirring occasionally, for about 3-4 minutes until they are golden and tender.

4. Deglaze the Pan:
- Pour in the white wine and chicken broth, scraping up any browned bits from the bottom of the skillet with a wooden spoon.
- Allow the mixture to simmer and reduce by half, about 3-4 minutes.

5. Add the Flavor:
- Stir in the lemon juice and capers.
- Return the chicken thighs to the skillet and spoon some of the sauce over them.
- Allow the chicken to warm through, about 2-3 minutes.

6. Garnish and Serve:
- Transfer the chicken to a serving platter.
- Garnish with lemon slices and chopped parsley before serving.
