Perfectly Pan-Fried New York Strip Steak with Garlic Rosemary Butter



Ingredients



- 2 tablespoons canola oil
- 2 New York strip steaks (about 1 inch thick)
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- 4 cloves garlic, smashed
- 2 sprigs fresh rosemary
- 3 tablespoons unsalted butter

Instructions



1. Prepare the Steaks
Remove the New York strip steaks from the refrigerator and allow them to come to room temperature, which typically takes about 20 minutes. Pat them dry with a paper towel to ensure a good sear. Meanwhile, season both sides of the steaks generously with salt and pepper.

2. Heat the Skillet
In a large cast-iron skillet or heavy-bottomed pan, add the canola oil and heat over medium-high heat until the oil is shimmering and just beginning to smoke.

3. Sear the Steaks
Carefully place the steaks in the skillet, laying them away from you to prevent splattering. Sear each side for about 3 minutes, ensuring a rich, brown crust forms. Do not move the steaks around; let them develop a crust.

4. Add Aromatics
After the steaks have been flipped and seared on both sides, add the smashed garlic cloves and rosemary sprigs to the pan. Allow them to infuse their flavors for about 30 seconds.
