Colorful Broccoli and Bacon Delight Salad
Ingredients
- 2 cups broccoli florets
- 1 sweet onion, finely chopped
- 6 slices bacon, cooked and crumbled
- 1/2 cup pecans, toasted and roughly chopped
- 1/2 cup raisins
- 1/2 cup mayonnaise
- 2 tablespoons powdered sugar
- 2 tablespoons apple cider vinegar
- 1/4 cup dried cranberries
- 1 cup diced apples (such as Granny Smith)
- 1/2 cup shaved carrots
- 1 cup shredded cabbage
- 1/2 cup plain yogurt
Instructions
1. Prepare the Vegetables and Fruits:
- In a large mixing bowl, combine the broccoli florets, finely chopped sweet onion, shaved carrots, and shredded cabbage.
- Add the diced apples and mix gently to ensure even distribution.
2. Cook the Bacon:
- In a skillet over medium heat, cook the bacon slices until crispy. Once cooked, place them on a paper towel to drain excess fat. Once cooled, crumble the bacon and set aside.
3. Toast the Pecans:
- In a separate dry skillet, add the pecans and toast them over low heat for about 5 minutes, stirring occasionally, until they are fragrant and lightly browned. Remove from heat and let them cool.
4. Mix the Sweet and Tangy Dressing:
- In a small bowl, whisk together the mayonnaise, plain yogurt, powdered sugar, and apple cider vinegar until smooth and creamy.
5. Assemble the Salad:
- To the bowl of vegetables and fruits, add the crumbled bacon, toasted pecans, raisins, and dried cranberries.
- Pour the dressing over the salad and toss everything together until well-coated and evenly mixed.
6. Chill and Serve:
- For best flavor, refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld.
- Serve chilled, and enjoy your vibrant, crunchy Broccoli and Bacon Delight Salad.
