Ingredients



- Cheese Straws
2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup unsalted butter, softened
6 ounces sharp cheddar cheese, grated
3 tablespoons bourbon
1/2 cup pecans, finely chopped

- Bourbon Glaze
1/4 cup bourbon
1/4 cup maple syrup
2 tablespoons unsalted butter

- Mint Pimento Cheese Spread
1 cup cream cheese, softened
1 cup cheddar cheese, grated
1/4 cup pimento peppers, diced
2 tablespoons fresh mint, chopped
Salt and pepper to taste

- Black-Eyed Pea Spread
1 cup black-eyed peas, cooked
1/4 cup Italian dressing
1/4 cup garlic cheese grits, cooled
1 tomato, diced
Salt and pepper to taste

Instructions



1. Prepare the Cheese Straws:
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the flour and salt.
- Add the softened butter and grated cheddar cheese. Mix until a crumbly texture forms.
- Pour in the bourbon and mix until a dough forms.
- Fold in the chopped pecans.
- Roll the dough to about 1/4 inch thickness and cut into strips.
- Arrange the strips on a baking sheet lined with parchment paper.

2. Baking the Cheese Straws:
- Bake in the preheated oven for PT25M (25 minutes) until golden brown. Cool on a wire rack.

3. Prepare the Bourbon Glaze:
- In a small saucepan over medium heat, combine bourbon, maple syrup, and butter.
- Stir constantly until the mixture thickly coats the back of a spoon (about PT5M, 5 minutes).

4. Glaze the Cheese Straws:
- Brush the warm cheese straws with the bourbon glaze and let them set for about PT10M (10 minutes).

5. Mint Pimento Cheese Spread:
- In a medium bowl, combine the softened cream cheese and grated cheddar cheese.
- Mix in the diced pimento peppers and chopped mint. Season with salt and pepper to taste.

6. Black-Eyed Pea Spread:
- In a food processor, combine cooked black-eyed peas, Italian dressing, and garlic cheese grits.
- Pulse until smooth and well combined. Fold in diced tomatoes and adjust seasoning with salt and pepper.

7. Assemble and Serve:
- Arrange cheese straws on a serving platter.
- Serve alongside bowls of mint pimento cheese spread and black-eyed pea spread.
