Broiled Mediterranean Eggplant and Feta Pita Bites
Ingredients
- 1 medium eggplant, sliced into 1/4-inch rounds
- 2 medium tomatoes, diced
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 red bell pepper, diced
- 1/2 cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped
- 4 small pita breads
- 2 tablespoons olive oil
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
1. Preheat the Broiler
Preheat your oven's broiler to high.
2. Prepare the Eggplant
Arrange the eggplant slices on a baking sheet. Brush both sides lightly with olive oil and sprinkle with salt and pepper.
3. Broil the Eggplant
Broil the eggplant slices about 4 inches from the heat source for approximately 5 minutes on each side, or until they are golden brown and tender.
4. Prepare the Tomato Mixture
In a medium bowl, combine the diced tomatoes, minced garlic, chopped onion, and diced red bell pepper. Season with salt and pepper, then add half of the chopped parsley. Mix well.
5. Assemble the Pita Bites
Place the pitas on a large baking sheet. On each pita, layer two to three slices of broiled eggplant. Spoon the tomato mixture over the eggplant.
6. Add the Cheeses
Sprinkle crumbled feta evenly over the tomato-topped eggplant, followed by the grated Parmesan.
7. Broil the Pita Bites
Return the baking sheet to the oven and broil for an additional 4 minutes, or until the feta slightly melts and the edges of the pitas are crispy.
8. Garnish and Serve
Remove from the oven and sprinkle with the remaining parsley. Slice into quarters and serve warm.
