Agave-Lime Stir-Fry with a Zesty Twist



Ingredients



- 2 tablespoons agave syrup
- 1 teaspoon active dry yeast
- 1 cup warm water
- 2 tablespoons triple sec
- 1/4 cup fresh lime juice
- 1 pound chicken breast, thinly sliced
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh cilantro, chopped for garnish

Instructions



1. Prepare the Yeast Mixture
Pour the warm water into a small bowl, add the active dry yeast, and stir until the yeast is dissolved. Let it rest for about 5 minutes until it becomes frothy. Set aside.

2. Marinate the Chicken
In a medium bowl, combine agave syrup, triple sec, fresh lime juice, and the prepared yeast mixture. Add the thinly sliced chicken breast, ensuring all pieces are coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes.

3. Prepare the Vegetables
While the chicken is marinating, prepare the vegetables. Slice the red and yellow bell peppers, and onion. Mince the garlic and set aside.

4. Stir Fry the Chicken
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Remove the chicken from the marinade, shaking off any excess, and add it to the skillet. Stir-fry the chicken for about 5-7 minutes, or until cooked through and golden brown. Remove the chicken from the skillet and set aside.

5. Stir Fry the Vegetables
In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onion and garlic, stir-frying for about 2 minutes until the onion becomes translucent. Add the sliced bell peppers and continue to stir fry for another 3 minutes until they are tender-crisp.

6. Combine and Season
Return the cooked chicken to the skillet with the vegetables. Add soy sauce, salt, and black pepper. Stir to combine all ingredients thoroughly, ensuring the soy sauce coats all pieces evenly.

7. Serve
Remove from heat and transfer the stir-fry to a serving dish. Garnish with fresh cilantro. Serve immediately.
