Decadent Banana Nut Chocolate Chip Snack Bread
Ingredients
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/4 cup margarine
- 2 large eggs
- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1/2 cup chopped nuts (walnuts or pecans, or a mix)
Instructions
1. Preheat the Oven:
Begin by preheating your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or cooking spray, ensuring all sides are well coated.
2. Cream Sugar and Fats:
In a large mixing bowl, combine the granulated sugar, unsalted butter, and margarine. Using an electric mixer on medium speed, beat the ingredients until the mixture is fluffy and well-blended, roughly 3 minutes.
3. Incorporate Eggs and Bananas:
Add the eggs, one at a time, to the creamed mixture, beating well after each addition. Stir in the mashed bananas until thoroughly combined.
4. Prepare Dry Ingredients:
In a separate bowl, sift together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the banana mixture, mixing on low speed until just combined – do not overmix.
5. Fold in Extras:
Gently fold the chocolate chips and chopped nuts into the batter using a spatula or wooden spoon, ensuring even distribution.
6. Bake:
Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Place in the preheated oven and bake for approximately 60 to 70 minutes. The bread is done when a toothpick inserted into the center comes out clean.
7. Cool and Enjoy:
Remove the loaf from the oven and let it cool in the pan for about 15 minutes. Transfer the bread to a wire rack to cool completely before slicing and serving.
