Microwave Spinach Paneer Delight with Turmeric Rice



Ingredients



For Spinach Paneer:
- 2 cups fresh spinach leaves
- 8 ounces paneer, cubed
- 1/2 cup whole milk
- 1/4 cup heavy cream
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 1 teaspoon ground turmeric
- 1 teaspoon salt
- 1 whole green chile, finely chopped

For Turmeric Rice:
- 1 cup basmati rice
- 1 teaspoon ground turmeric
- 1 teaspoon cumin seeds
- 1 small onion, finely chopped
- 2 cups water
- Salt, to taste

Garnish:
- Fresh coriander leaves, chopped
- Additional green chiles, sliced (optional)

Instructions



1. Prepare the Turmeric Rice:
- Rinse the basmati rice under cold water until the water runs clear.
- In a microwave-safe bowl, combine rinsed rice, ground turmeric, cumin seeds, finely chopped onion, and salt. Add 2 cups of water.
- Cover with a microwave-safe lid and microwave on high for PT12M (12 minutes) until rice is fully cooked and water is absorbed. Fluff with a fork.

2. Prepare the Spinach Paneer:
- Place fresh spinach leaves in a large microwave-safe bowl. Add 2 tablespoons of water.
- Cover and microwave on medium power for PT3M (3 minutes) or until wilted. Allow to cool slightly.
- In the same bowl, add minced garlic, ginger, and chopped green chile. Microwave on high for PT2M (2 minutes).
- Blend the cooked spinach mixture to make a smooth paste.

3. Combine Ingredients:
- Add the spinach paste, cubed paneer, whole milk, heavy cream, lemon juice, ground turmeric, and salt into the microwave-safe bowl with the spinach.
- Stir well to combine all ingredients.

4. Cook the Spinach Paneer:
- Cover the bowl loosely and microwave on high for PT5M (5 minutes), stirring midway through, until the paneer is heated through and the flavors meld together.

5. Serve:
- Plate the turmeric rice and spoon the spinach paneer alongside.
- Garnish with fresh coriander leaves and additional sliced green chiles if desired.
