Berry & Citrus Ricotta Crostini with Balsamic Drizzle
Ingredients
Main Components:
- 1 cup ricotta cheese
- 2 tablespoons honey
- 1 tablespoon maple syrup
- 1/4 teaspoon salt
Fruit & Toppings:
- 1/2 cup mixed berries, diced
- 1 tablespoon chia seeds
- 1/4 cup toasted nuts, roughly chopped
- 1/4 cup pomegranate seeds
- 1 tablespoon mixed berry jam
- 2 blood oranges, peeled and segmented
- 2 figs, sliced
- 1 kiwi, peeled and sliced
- 1/2 cup fresh berries (strawberries or blueberries)
Savory Components:
- 2 heirloom tomatoes, diced
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1/4 cup fresh basil leaves, torn
- 1/4 cup Castelvetrano olives, pitted and halved
- 1 garlic clove, minced
- 1 baguette or artisan bread
Instructions
1. Prepare the Ricotta Mixture:
- In a medium bowl, combine 1 cup of ricotta cheese, 2 tablespoons of honey, 1 tablespoon of maple syrup, and 1/4 teaspoon of salt. Mix until smooth and creamy. Set aside.
2. Prepare the Savory Tomato Mixture:
- In a separate bowl, mix 2 diced heirloom tomatoes, 1/4 cup of torn fresh basil, 1/4 cup of Castelvetrano olives, and 1 minced garlic clove. Drizzle with 2 tablespoons of olive oil and 1 tablespoon of balsamic vinegar. Gently toss to combine. Set aside.
3. Fruit & Topping Preparation:
- Dice 1/2 cup of mixed berries and toss with 1 tablespoon of chia seeds. Add 1 tablespoon of mixed berry jam and mix thoroughly. Prepare segments from 2 blood oranges, slice 2 figs and 1 kiwi into thin rounds.
4. Toast the Bread:
- Slice the baguette or artisan bread into 1/2-inch slices. Drizzle slices with remaining 1 tablespoon of olive oil.
- In a skillet over medium heat, sauté the bread slices for about 2 minutes per side, or until golden and crisp.
5. Assemble the Crostini:
- Spread a generous amount of the ricotta mixture onto each toasted bread slice.
- Top half of the crostini with the tomato and olive mixture.
- For the remaining crostini, artfully arrange the berry and chia mixture, blood oranges, fig slices, kiwi slices, and fresh berries. Sprinkle with 1/4 cup of pomegranate seeds and 1/4 cup of toasted nuts.
6. Finish with Balsamic Drizzle:
- Drizzle the crostini with remaining 1 tablespoon of balsamic vinegar before serving.
