Microwave Mediterranean Chicken & Turmeric Rice Bowl
Ingredients
- 1 cup long-grain rice
- 1 teaspoon turmeric powder
- 1 1/2 cups water
- 1 1/2 cups cooked chicken, shredded
- 1 large sweet plantain, peeled and sliced
- 1 cup black beans, rinsed and drained
- 1/2 cup diced red peppers
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 teaspoon fresh ginger, grated
- 1/4 cup citrus juices (lemon and orange blend recommended)
- 1/2 cup peas (optional)
- Fresh cilantro leaves for garnish (optional)
- Lime slices for garnish (optional)
- Salt and black pepper to taste
Instructions
1. Prepare the Rice:
- In a microwave-safe bowl, combine 1 cup of long-grain rice, 1 teaspoon of turmeric powder, 1/2 teaspoon of salt, and 1 1/2 cups of water.
- Cover the bowl with a microwave-safe lid or plastic wrap, leaving a small opening for steam to escape, and microwave on high for PT10M (10 minutes).
- Let it sit for an additional PT5M (5 minutes) to finish cooking from the residual heat. Fluff the rice with a fork once done.
2. Cook the Plantains:
- Place sliced sweet plantains on a microwave-safe plate. Microwave on high for PT3M (3 minutes) or until they become tender and slightly caramelized.
3. Sauté Aromatics:
- In another microwave-safe bowl, combine 2 cloves of minced garlic, 1 small finely chopped onion, and 1 teaspoon of grated fresh ginger.
- Microwave on high for PT1M30S (1 minute and 30 seconds), stirring halfway through until the mixture is aromatic.
4. Mix the Main Ingredients:
- In a large microwave-safe dish, combine the cooked chicken, black beans, diced red peppers, and optional peas with the sautéed aromatics.
- Add the 1/4 cup of citrus juices and season with salt and black pepper to taste.
- Cover and microwave on medium-high for PT4M (4 minutes), stirring halfway through to ensure even heating.
5. Assemble the Dish:
- Divide the turmeric rice evenly among four serving bowls.
- Top each bowl with the chicken mixture and arrange the sweet plantains on the side.
- Garnish with fresh cilantro leaves and lime slices, if desired.
