Hearty Breakfast Skillet with Chicken and Veggies



Ingredients


- 2 tablespoons olive oil
- 1 tablespoon cooking oil
- 2 tablespoons butter
- 4 large eggs
- 2 cups mixed veggies (e.g., bell peppers, onions, and spinach)
- 1 pound chicken strips
- 2 plain burger buns
- 1/4 teaspoon baking soda (not for taste, use to maintain veggie color)
- Dish soap (for cleanup; not part of the recipe)

Instructions



1. Preparation:
- Wash and chop your mixed veggies into bite-sized pieces.
- Cut the burger buns into cubes.

2. Season the Chicken:
- Season the chicken strips lightly with salt and pepper.

3. Veggie Preparation:
- In a large bowl, add chopped veggies and sprinkle with 1/4 teaspoon of baking soda to maintain their vibrant color.

4. Heat the Pan:
- Add 1 tablespoon of cooking oil and 1 tablespoon of olive oil to a large skillet over medium heat.
- Let the oil heat for about 2 minutes.

5. Cook the Chicken:
- Add chicken strips to the skillet. Cook for about 5 minutes on each side until they are golden brown and cooked through.
- Remove the chicken from the pan and set aside.

6. Sauté the Veggies:
- In the same skillet, add 1 tablespoon of olive oil if needed, then add veggies.
- Sauté for 5-7 minutes, stirring occasionally, until they are tender and slightly crisp. Remove and set aside.

7. Toast the Bread:
- Add 2 tablespoons of butter to the skillet. Once melted, add the cubed burger buns.
- Toast for 3-4 minutes, stirring frequently until golden brown.

8. Cook the Eggs:
- Push the bread cubes to the side of the skillet. Crack the eggs into the skillet and cook to your preferred doneness (sunny-side-up or over-easy usually takes about 3 minutes).

9. Combine Everything:
- Reintroduce the cooked chicken strips and veggies to the skillet, mixing gently to combine everything.

10. Serve:
- Divide the skillet breakfast into four portions. Serve hot.
