Ultimate Shrimp and Rice Stir Fry



Ingredients



- 3 cups cold cooked rice
- 2 tablespoons bacon grease
- 3 large eggs
- 1 pound raw, deveined shrimp
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon sesame oil
- 2 cups frozen vegetables (such as peas, carrots, and corn)
- 4 green onions, chopped
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons butter
- 1/2 teaspoon kosher salt
- 1 tablespoon Sriracha hot sauce
- 1 tablespoon chili paste

Instructions



1. Prepare the Ingredients:
- In a small bowl, beat the eggs with a pinch of kosher salt. Set aside.
- Thaw the frozen vegetables by placing them in a colander and running cold water over them. Drain well.
- Pat the shrimp dry with paper towels to ensure proper searing later.

2. Heat the Bacon Grease:
- In a large, non-stick skillet or wok, heat the bacon grease over medium-high heat until hot.

3. Cook the Shrimp:
- Add the shrimp to the hot skillet in a single layer. Cook for 1-2 minutes on each side until pink and opaque. Remove and set aside.

4. Cook the Eggs:
- Add the beaten eggs into the skillet. Stir occasionally to cook through, breaking them into small pieces. Once cooked, transfer them to a separate plate.

5. Stir Fry the Vegetables:
- Add butter to the skillet. Once melted, add the thawed vegetables, stirring constantly for 3-4 minutes until tender.

6. Combine Ingredients:
- Add the cooked rice to the skillet along with the cooked eggs and shrimp. Add low-sodium soy sauce, sesame oil, Sriracha hot sauce, and chili paste. Toss everything well to ensure even coating and heat throughout.

7. Season and Serve:
- Add freshly ground black pepper and chopped green onions. Stir to combine. Adjust seasoning if necessary, adding more soy sauce or Sriracha to taste.
- Serve hot, garnished with additional green onions if desired.
