Zesty Broccoli and Carrot Slaw with Almonds
Ingredients
- 3 cups broccoli stalks, julienned (or 1 bag broccoli slaw mix)
- 1 cup carrots, shredded
- 1/2 cup light mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon sugar
- 1/4 cup raisins (or craisins/dried cranberries)
- 1/2 teaspoon ground mustard
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup sliced almonds
Instructions
1. Prepare the Broccoli and Carrot Base:
- If using broccoli stalks, julienne them into thin strips. Combine them with the shredded carrots in a large mixing bowl.
2. Make the Dressing:
- In a medium-sized bowl, whisk together the light mayonnaise, apple cider vinegar, and sugar until the sugar is dissolved.
- Add in the ground mustard, salt, and pepper, and continue to whisk until all ingredients are well combined.
3. Combine Ingredients:
- Pour the dressing over the broccoli and carrot mixture. Toss until the vegetables are evenly coated.
4. Add Sweetness and Crunch:
- Fold in the raisins (or cranberries) and sliced almonds, mixing gently to evenly distribute them throughout the slaw.
5. Chill for Flavor:
- Cover the slaw and refrigerate for at least 15 minutes to allow the flavors to meld. Serve chilled.
