Succulent Wine-Preserved Oven-Roasted Chicken
Ingredients
- 1 whole chicken (4-5 pounds)
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon olive oil
- 1 cup dry white wine
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 1 lemon, quartered
- 1 onion, quartered
- 2 cloves garlic, smashed
- Wine-preserving gas (to seal the opened wine)
Instructions
1. Preparation of Chicken:
- Preheat your oven to 375°F (190°C).
- Pat the whole chicken dry with paper towels. This helps achieve a crispy skin.
2. Seasoning:
- Rub the chicken inside and out with salt, black pepper, garlic powder, and onion powder. Ensure even coverage for full flavor distribution.
- Drizzle the olive oil over the chicken, rubbing it over the skin to ensure even crisping.
3. Stuffing:
- Stuff the cavity of the chicken with rosemary, thyme, lemon quarters, onion quarters, and smashed garlic cloves. This will infuse the meat with aromatic flavor.
4. Wine Preparation:
- Pour 1 cup of dry white wine into a measuring cup.
- Seal the remaining wine bottle with wine-preserving gas to maintain its freshness for future use.
5. Roasting the Chicken:
- Place the chicken breast-side up in a roasting pan.
- Pour the wine into the roasting pan around the base of the chicken. This will help keep the chicken moist and add flavor.
- Roast in the preheated oven for 1 hour and 30 minutes (PT1H30M), or until the internal temperature reaches 165°F (75°C). Baste occasionally with the pan juices for added moisture.
6. Resting and Serving:
- Once cooked, remove the chicken from the oven and let it rest for at least 15 minutes before carving. This allows the juices to redistribute, resulting in more tender meat.
- Carve and serve with your choice of sides, using the wine-infused pan juices as a delicious gravy.
