Pan-Fried Potato and Bacon Vinaigrette Delight



Ingredients



- 4 medium potatoes, peeled and diced
- 6 strips of bacon, chopped
- 1 large onion, finely sliced
- 3 tablespoons Dijon mustard
- 2 tablespoons apple cider vinegar
- 1/4 cup mayonnaise
- Salt and pepper to taste
- 2 tablespoons olive oil

Instructions



1. Prepare the Potatoes
Place the diced potatoes in a medium-sized pot and cover them with water. Bring to a boil over medium-high heat. Cook for approximately 10 minutes until the potatoes are just tender but not falling apart. Drain and set aside.

2. Cook the Bacon
In a large skillet, cook the chopped bacon over medium heat until it becomes crispy, about 6-8 minutes. Remove the bacon from the skillet and set it aside on a paper towel-lined plate to drain. Reserve 1 tablespoon of bacon fat in the skillet and discard the rest.

3. Sauté the Onions
Add the sliced onions to the reserved bacon fat in the skillet. Cook over medium heat until the onions become soft and translucent, approximately 5 minutes. Remove the onions from the skillet and set aside with the bacon.

4. Pan-Fry the Potatoes
Add 2 tablespoons of olive oil to the same skillet. Once the oil is hot, add the drained potatoes. Fry them over medium-high heat, stirring occasionally, until they are golden brown and crispy on the outside, about 10-12 minutes. Season with salt and pepper to taste.

5. Mix the Dressing
In a small bowl, whisk together the Dijon mustard, apple cider vinegar, and mayonnaise until smooth. Adjust seasoning with salt and pepper if needed.

6. Combine Ingredients
Once the potatoes are crispy, reduce the heat to low and return the cooked bacon and onions to the skillet. Pour the vinaigrette dressing over the mixture and gently toss everything together to ensure the potatoes, bacon, and onions are well coated.

7. Serve
Transfer the pan-fried potato and bacon vinaigrette to a serving dish. Serve warm and enjoy this hearty lunch!
