Spicy Chicken Lettuce Wraps with Stir-Fried Vegetables
Ingredients
- Main Ingredients:
- 1 pound chicken breast, thinly sliced
- 8 large lettuce leaves (for wrapping)
- 1 cup bell peppers, thinly sliced
- 1 cup water chestnuts, diced
- 1 cup shredded carrots
- 1 cup cabbage, thinly sliced
- 1 zucchini, julienned
- 1 cucumber, julienned
- 1 cup chopped mushrooms
- 1/2 cup cooked rice noodles
- Sauce and Seasoning:
- 1 tablespoon Sriracha
- 1 tablespoon Sambal
- 3 tablespoons Hoisin sauce
- 2 tablespoons chopped peanuts
- 2 teaspoons cornstarch
- 2 tablespoons olive oil
- 1 tablespoon peanut oil
- 2 teaspoons minced ginger
- 2 teaspoons minced garlic
- 2 green onions, sliced
- Optional:
- Additional lettuce leaves for serving
Instructions
1. Prepare the Sauce:
- In a small bowl, mix the Sriracha, Sambal, Hoisin sauce, and cornstarch. Stir well until the cornstarch dissolves completely. Set aside.
2. Cook the Rice Noodles:
- Cook 1/2 cup of rice noodles according to package instructions. Drain and set aside.
3. Prepare the Chicken:
- In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat. Add the minced ginger and garlic, cooking for about 30 seconds until fragrant.
- Add the thinly sliced chicken breast to the skillet and stir-fry for about 5 minutes, or until fully cooked and slightly golden. Remove the chicken from the skillet and set aside.
4. Stir-Fry the Vegetables:
- In the same skillet, add the remaining 1 tablespoon of olive oil and 1 tablespoon of peanut oil. Once hot, add the bell peppers, water chestnuts, shredded carrots, cabbage, zucchini, cucumbers, and mushrooms. Stir-fry for about 5 minutes until the vegetables are tender-crisp.
5. Combine and Cook:
- Return the cooked chicken and rice noodles to the skillet with the vegetables. Add the prepared sauce and stir everything together until well combined. Cook for an additional 2-3 minutes, allowing the sauce to thicken and coat the ingredients evenly.
6. Assemble the Lettuce Wraps:
- Remove from heat and generously spoon the stir-fried chicken and vegetable mixture into individual lettuce leaves.
7. Garnish:
- Sprinkle chopped peanuts and sliced green onions over the wraps for added crunch and flavor. Serve immediately.
