Lemon Bliss Bars with Powdered Sugar Glaze
Ingredients
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 2 large eggs
- 1/4 cup fresh lemon juice (approximately 2 lemons)
- 1 tablespoon lemon zest
- 1 cup confectioner's sugar
Instructions
1. Preheat Oven
Preheat your oven to 350°F (175°C).
2. Prepare Baking Dish
Grease an 8-inch square baking pan with butter or non-stick cooking spray. Set aside.
3. Cream Butter and Sugar
In a large mixing bowl, cream together 1 cup of granulated sugar and 1/2 cup of softened butter using a hand mixer or stand mixer, until light and fluffy.
4. Add Eggs
Add 2 large eggs to the butter mixture, one at a time, beating well after each addition.
5. Incorporate Dry Ingredients
Gradually add 1 cup of all-purpose flour and 1/4 teaspoon salt into the wet mixture. Mix until just combined, avoiding overmixing.
6. Flavor with Lemon
Stir in 1/4 cup of fresh lemon juice and 1 tablespoon of lemon zest until the batter is just uniform.
7. Bake
Pour the batter into the prepared baking dish, spreading evenly with a spatula. Bake in the preheated oven for 25-30 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out clean.
8. Cool
Allow the bars to cool in the pan on a wire rack while you prepare the glaze.
9. Prepare Glaze
In a small bowl, gradually whisk 1 cup of confectioner's sugar with 2 tablespoons of lemon juice until smooth and glossy.
10. Glaze the Bars
Once the bars are cool, evenly spread the glaze over the top. Let the glaze set for about 10 minutes before cutting into squares.
