Oven-Baked Chicken Enchiladas with Avocado and Salsa Verde

- 8 corn tortillas
- 2 cups cooked chicken, shredded
- 1 cup chicken broth
- 1 jalapeño, finely chopped
- 2 cups salsa verde
- 2 avocados, diced
- 1 cup sour cream
- 1 1/2 cups shredded mozzarella cheese

Instructions



1. Preheat the Oven:
Preheat your oven to 375°F (190°C).

2. Prepare the Filling:
In a large mixing bowl, combine the shredded chicken, 1 cup of salsa verde, and the finely chopped jalapeño. Stir until all ingredients are well-mixed and chicken is fully coated in the salsa.

3. Soften the Tortillas:
Heat the chicken broth in a shallow skillet or pan over medium heat. Once warmed, dip each corn tortilla briefly (about 5 seconds) into the broth to soften. This will make them more pliable for rolling and prevent cracking.

4. Assemble the Enchiladas:
Spoon approximately 2 tablespoons of the chicken filling onto each softened tortilla, then roll them up tightly. Place the rolled tortillas seam-side down in a greased 9x13-inch baking dish.

5. Top with Salsa Verde:
Pour the remaining salsa verde evenly over the enchiladas in the dish, ensuring they are well covered.

6. Add the Cheese:
Sprinkle the shredded mozzarella cheese over the top of the enchiladas, making sure to cover them completely.

7. Bake the Enchiladas:
Place the baking dish in the preheated oven and bake for 20 to 25 minutes, or until the cheese is melted and bubbling and the edges of the tortillas are slightly crispy.

8. Prepare the Toppings:
While the enchiladas are baking, prepare the toppings. In a small bowl, combine the diced avocados with a pinch of salt and pepper. In another dish, have your sour cream ready for serving.

9. Garnish and Serve:
Once baked, remove the enchiladas from the oven. Allow to cool slightly before serving. Top each serving with a generous spoonful of diced avocado and a dollop of sour cream. Enjoy!
