Oven-Roasted Garlic Dill Cucumber Chips
Ingredients
- 2 cucumbers, thinly sliced
- 1 teaspoon salt
- 1/4 cup white vinegar
- 2 cloves garlic, minced
- 1 tablespoon fresh dill, chopped
- 1 teaspoon sugar
- 1 teaspoon mixed spices (such as cracked black pepper, paprika, and coriander)
- 1/2 cup water
Instructions
1. Preparation:
Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper to prevent sticking.
2. Cucumber Slicing:
Use a mandoline or sharp knife to slice the cucumbers very thinly (about 1/8 inch thick). This ensures even cooking and crispness.
3. Marinade Preparation:
In a large mixing bowl, combine the vinegar, minced garlic, chopped dill, sugar, mixed spices, and water. Whisk together until the sugar is fully dissolved.
4. Brining Cucumbers:
Add the cucumber slices to the marinade. Stir gently to ensure each slice is thoroughly coated. Let them sit in the marinade for 15 minutes.
5. Draining and Pat Dry:
After marinating, drain the cucumber slices and pat them dry with paper towels to remove excess moisture. This step is crucial for a crispy finish.
6. Arrange on Baking Sheet:
Lay the cucumber slices in a single layer on the prepared baking sheet. Sprinkle the salt evenly over the top of the slices.
7. Roasting:
Place the baking sheet in the preheated oven and roast for 30-35 minutes. Check every 10 minutes, as oven times may vary. Remove the cucumbers once they are golden brown and crispy.
8. Cooling:
Allow the chips to cool on the baking sheet for a few minutes. They will continue to crisp as they cool.
9. Serving:
Serve immediately or store them in an airtight container for up to three days for a delightful snack.
