Hearty Oven-Baked Beef and Vegetable Casserole



Ingredients


- 1 pound ground beef
- 3 medium Yukon Gold potatoes, thinly sliced
- 2 large carrots, peeled and sliced
- 1 white onion, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon Italian seasoning
- 1 yellow squash, sliced
- 1 zucchini, sliced
- 1 cup mushrooms, sliced
- 4 slices bacon, cooked and crumbled
- 1 cup prepared gravy
- 1/2 cup sour cream
- 1 cup shredded cheese of choice (e.g., cheddar, mozzarella)

Instructions


1. Preheat Oven and Prepare Baking Dish
Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish lightly with olive oil.

2. Cook the Ground Beef
In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Cook the ground beef until browned, about 6-8 minutes, breaking it into crumbles as it cooks. Drain excess fat and set aside.

3. Sauté the Aromatics
In the same skillet, add another tablespoon of olive oil if needed. Add the diced onion and minced garlic, and sauté until the onion becomes translucent, about 3 minutes. Remove from heat and mix in the Italian seasoning.

4. Layer the Casserole
Spread the sliced potatoes evenly at the bottom of the prepared baking dish. Layer the sliced carrots, yellow squash, zucchini, and mushrooms on top of the potatoes. Season with a pinch of salt and pepper if desired.

5. Assemble the Beef Mixture
In a medium bowl, combine the cooked ground beef, sautéed onion and garlic mixture, crumbled bacon, prepared gravy, and sour cream. Stir until well combined.

6. Combine and Layer
Pour the beef mixture over the vegetables in the baking dish. Spread it out to create an even layer.

7. Add Cheese
Sprinkle the shredded cheese evenly over the casserole.

8. Bake the Casserole
Cover the dish with aluminum foil and bake in the preheated oven for 40 minutes. Remove the foil and bake for an additional 15 minutes or until the top is golden brown and bubbly.

9. Rest and Serve
Remove the casserole from the oven and allow it to rest for 10 minutes before serving to let the flavors meld together.
