- 1/2 cup shredded cheddar cheese

Instructions



1. Prepare Ingredients:
Begin by chopping 1 cup of fresh spinach, dicing 1 red bell pepper and 1 small onion, and mincing 2 cloves of garlic. Set these aside separately for easy access during cooking.

2. Heat the Skillet:
Set a large skillet on the stove and turn the heat to medium. Add 2 tablespoons of olive oil and allow it to heat for about 2 minutes (PT2M).

3. Add Vegetables:
Once the oil is shimmering, add the diced onion and red bell pepper to the skillet. Sauté for approximately 5 minutes (PT5M), or until the onion becomes translucent and the pepper softens. Stir occasionally to ensure even cooking.

4. Add Garlic and Spinach:
Add the minced garlic to the skillet, stirring for about 1 minute (PT1M) until fragrant. Then, incorporate the chopped spinach, cooking until it wilts, approximately 2 minutes (PT2M).

5. Season Veggies:
Sprinkle 1/2 teaspoon salt and 1/4 teaspoon black pepper over the vegetables, mixing well to ensure everything is evenly seasoned.

6. Create Nests for Eggs:
Make four small wells in the vegetable mixture. Crack one egg into each well, being careful not to break the yolks.

7. Cook the Eggs:
Cover the skillet with a lid, reducing the heat to low. Allow the eggs to cook until the whites are set but the yolks remain runny, roughly 3 to 4 minutes (PT3M-PT4M), depending on your preference for yolk doneness.

8. Add Cheese:
Once the eggs are nearly cooked, sprinkle 1/2 cup of shredded cheddar cheese evenly over the top. Cover again for 1-2 minutes (PT1M-PT2M) until the cheese melts.

9. Garnish and Serve:
Remove the skillet from the heat. Garnish with 1 tablespoon of fresh chopped parsley. Serve immediately, either from the skillet for a rustic look or plated individually.
