Smoky Grilled Chicken Wings with Paprika Rub
Ingredients
- 2 pounds chicken wings
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 2 teaspoons paprika
- 1/4 cup cherry wood pellets
- 1/4 cup hickory wood pellets
Instructions
1. Prepare the Wings:
- Rinse the chicken wings under cold water and pat them dry with paper towels.
- Place the wings in a large bowl.
2. Season the Wings:
- Drizzle the olive oil over the wings and toss to coat evenly.
- In a small bowl, mix the salt, black pepper, and paprika.
- Sprinkle the seasoning mixture over the wings, ensuring each piece is well-coated. Set aside while preparing the grill.
3. Prepare the Grill:
- Set up a charcoal grill for indirect grilling. Light the charcoal and allow it to become ashed over. Spread the coals to one side of the grill.
- Soak the cherry and hickory wood pellets in water for about 15 minutes. Drain and wrap them in aluminum foil, poking a few holes in the foil to allow smoke to escape.
- Place the foil packet of pellets on top of the hot coals.
4. Grill the Wings:
- Place the chicken wings on the cooler side of the grill for indirect cooking.
- Cover the grill, allowing the smoke from the pellets to infuse the wings.
- Cook the wings for approximately 30 minutes.
5. Finish Cooking:
- Move the wings directly over the hot coals to finish cooking and achieve a crispy skin.
- Grill for an additional 5-10 minutes, turning occasionally, until the wings are golden brown and cooked through (internal temperature should reach 165°F).
6. Serve and Enjoy:
- Remove the wings from the grill and let them rest for a few minutes.
- Serve hot as a delicious, smoky snack.
