Oven-Roasted Lentil and Seed Power Bites
Ingredients
- 1 cup lentils
- 1/2 cup all-purpose flour
- 1/4 cup whole wheat flour
- 1/4 cup oat flour
- 1/4 cup rolled oats
- 1/4 cup chia seeds
- 1/4 cup coconut sugar
- 1 1/2 teaspoons fancy salt (Himalayan or sea salt recommended)
- 1/2 teaspoon baking powder
- 3/4 cup water
- 1 tablespoon olive oil
Instructions
1. Prepare the Lentils:
- Preheat your oven to 375°F (190°C).
- Rinse and drain the lentils. Cook them in a medium saucepan with 2 cups of water over medium heat until tender, approximately PT20M (20 minutes). Drain any excess water.
2. Combine Dry Ingredients:
- In a large mixing bowl, combine all-purpose flour, whole wheat flour, oat flour, rolled oats, chia seeds, coconut sugar, baking powder, and fancy salt. Mix thoroughly to ensure even distribution of ingredients.
3. Mix Wet Ingredients:
- Add the cooked lentils to the bowl of dry ingredients. Stir in the olive oil and gradually add 3/4 cup water, mixing until a slightly sticky dough forms.
4. Shape the Bites:
- Lightly grease a baking sheet with olive oil.
- Using your hands or a spoon, form the mixture into 1-inch balls and place them evenly on the prepared baking sheet.
5. Roast:
- Place the baking sheet in the preheated oven and roast the bites for PT25M (25 minutes) or until they are golden brown and crispy on the outside.
6. Cool & Serve:
- Allow the bites to cool for a few minutes on the baking sheet before serving warm. These bites can be stored in an airtight container for up to a week.
