Lemon-Lime Roasted Watermelon with Ginger Basil Kombucha Glaze
Ingredients
- 1 small watermelon, cut into 1-inch thick wedges
- 1 lemon, zested and juiced
- 1 lime, zested and juiced
- 1-inch piece of fresh ginger, grated
- 1 jalapeño, sliced thinly (remove seeds for less heat)
- 1/4 cup fresh basil leaves, torn
- 1/2 cup kombucha (preferably ginger or original flavor)
- 1/4 cup white wine
- 8 large strawberries, hulled and sliced
Instructions
1. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
2. Prepare the Glaze:
- In a small saucepan over medium heat, combine the lemon juice, lime juice, grated ginger, kombucha, and white wine.
- Allow the mixture to simmer gently for about 5 minutes, reducing slightly to concentrate flavors.
- Remove the glaze from heat and let it cool slightly.
3. Roast Watermelon:
- Arrange the watermelon wedges on a large baking sheet lined with parchment paper.
- Drizzle half of the kombucha glaze evenly over the watermelon wedges.
- Sprinkle the lemon and lime zest over the top.
- Add sliced jalapeño rings over the watermelon to infuse subtle heat while roasting.
- Place the tray in the preheated oven and roast for 10–15 minutes until the watermelon is tender and slightly caramelized.
4. Prepare Basil and Strawberries:
- While the watermelon roasts, toss the torn basil leaves and sliced strawberries together in a bowl.
5. Assemble the Dish:
- Once the watermelon is roasted, remove it from the oven and transfer it to a serving platter.
- Drizzle the remaining kombucha glaze over the top of the roasted watermelon.
- Scatter the basil and strawberry mixture over the watermelon to finish.
6. Serve:
- Serve the dish warm or at room temperature as a gourmet snack.
