Mango Salsa with Cinnamon Tortilla Chips
Ingredients
For the Mango Salsa:
- 2 ripe mangoes, peeled, pitted, and diced
- 1/2 red bell pepper, diced
- 1/4 red onion, finely chopped
- 1 jalapeño pepper, seeded and minced
- 2 tablespoons fresh cilantro, chopped
- Juice of 1 lime
- Salt to taste
For the Cinnamon Tortilla Chips:
- 6 flour tortillas (8-inch size)
- 1/4 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
1. Prepare the Mango Salsa:
- In a medium mixing bowl, combine the diced mangoes, red bell pepper, red onion, and jalapeño pepper.
- Add the chopped cilantro and lime juice to the mango mixture, then gently mix until all ingredients are well combined.
- Season with a pinch of salt, stir once more, and taste. Adjust seasoning if necessary.
- Cover the bowl with plastic wrap and refrigerate the salsa for at least 30 minutes to allow the flavors to meld.
2. Make Cinnamon Tortilla Chips:
- Preheat your oven to 350°F (175°C).
- In a small bowl, mix the granulated sugar and cinnamon.
- Arrange the flour tortillas on a cutting board. Use a sharp knife or pizza cutter to cut each tortilla into 8 wedges.
- Lay the tortilla wedges in a single layer on a baking sheet.
- Lightly brush each tortilla wedge with melted butter using a pastry brush.
- Sprinkle the sugar-cinnamon mixture generously over the buttered tortilla wedges.
- Bake in the preheated oven for about 10 minutes, or until the chips are crisp and golden brown.
- Remove from the oven and let them cool before serving with the mango salsa.
