Savory Herb-Infused Corn Sauté
Ingredients
- 4 ears of fresh corn, shucked and kernels removed (approximately 4 cups)
- 2 tablespoons olive oil
- 3 tablespoons fresh herbs (such as parsley, thyme, and basil), finely chopped
- 2 garlic cloves, minced
- 1 small shallot, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon butter
- 1 tablespoon lemon juice
Instructions
1. Prepare Ingredients:
- Begin by shucking the corn and carefully removing the kernels. Approximately 4 cups should suffice. Finely chop the herbs, mince the garlic, and chop the shallot.
2. Heat the Oil:
- In a large skillet over medium heat, add olive oil. Allow it to heat for about 1 minute until it shimmers.
3. Sauté Shallot and Garlic:
- Add the chopped shallot and minced garlic to the skillet. Sauté for about 3 minutes, stirring occasionally, until they are fragrant and the shallot becomes translucent.
4. Cook the Corn:
- Add the corn kernels to the skillet. Stir in the salt and black pepper. Cook the corn, stirring often, until it is tender and golden, around 8-10 minutes.
5. Infuse with Herbs:
- Add the fresh herbs to the skillet. Stir well to combine and infuse the corn with their flavors. Continue to cook for another 2 minutes.
6. Finish with Butter and Lemon:
- Reduce heat to low. Stir in the butter and lemon juice, allowing the butter to melt and coat the corn evenly. Turn off the heat and give a final stir.
7. Serve:
- Transfer the sautéed corn to a serving dish and enjoy hot as a delightful dinner side.
