Pan-Seared Scallops with Garlic Herb Butter Sauce
Ingredients
- 1 pound large scallops (about 12)
- 3 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 2 tablespoons lemon juice
- 2 tablespoons fresh herbs, chopped (such as parsley and chives)
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons olive oil
Instructions
1. Prepare Scallops: Begin by patting the scallops dry with a paper towel to ensure a nice sear. Season both sides generously with salt and black pepper.
2. Heat Pan: Place a large skillet over medium-high heat. Add the olive oil and let it heat until shimmering but not smoking.
3. Sear Scallops: Carefully place the scallops in the pan in a single layer, ensuring they are not touching. Sear each side for about 2-3 minutes, until a golden crust forms. Avoid overcrowding the pan to achieve a perfect sear.
4. Remove Scallops: Once done, transfer the scallops to a plate and cover loosely with aluminum foil to keep warm.
5. Make Garlic Herb Butter Sauce: In the same skillet, add the butter and reduce the heat to medium. Once the butter has melted, add the minced garlic and sauté for 30 seconds, until fragrant.
6. Deglaze with Wine: Pour in the white wine and lemon juice, scraping up any browned bits from the bottom of the pan. Allow the sauce to simmer for 2-3 minutes, reducing slightly.
7. Finish Sauce: Stir in the fresh herbs and season with salt and pepper to taste. Return the scallops to the pan, spooning the sauce over them.
8. Serve: Transfer the scallops and sauce to a serving dish. Garnish with additional fresh herbs if desired and serve immediately.
