Oven-Roasted Lemon Herb Cod with Brisket & Ziti Fusion
Ingredients
- 4 (6-ounce) cod fillets
- 1 pound brisket, sliced thin
- 8 ounces ziti pasta
- 1 sourdough loaf, sliced into cubes
- 1 lemon, juiced and zested
- 2 tablespoons poppyseeds
- 1 teaspoon salt
- 1 teaspoon mixed spices (e.g., paprika, garlic powder, pepper)
- 2 tablespoons olive oil
- 1 bunch fresh herbs (e.g., parsley, thyme, rosemary)
- 4 birria tacos, shredded
- 4 fortune cookies, crushed (for garnish)
- 1 cup strawberries, halved
- 1 citrus (e.g., orange), sectioned for garnish
Instructions
1. Preheat Oven
Preheat your oven to 375°F (190°C).
2. Prepare Ziti
In a large pot of salted boiling water, cook 8 ounces of ziti pasta until al dente, approximately PT10M
10 minutes. Drain and set aside.
3. Prepare Herb Mixture
In a small bowl, combine the juice and zest of 1 lemon, 1 tablespoon olive oil, poppyseeds, and a mix of chopped herbs.
4. Season Cod

5. Prepare Brisket

7. Toast Sourdough
Place sourdough cubes onto a separate tray and toast in the oven for PT5M
5 minutes, until golden brown.
8. Prepare Gumbo Option
Optional: Heat the pre-made gumbo as a side dish or sauce, according to packaging instructions.
9. Assemble Dish
On a large platter, layer the cooked ziti, placing the roasted cod and slices of brisket on top. Scatter the toasted sourdough cubes around the dish.
