Chilled Cucumber and Herb Medley with Feta and Sesame



Ingredients



- 3 medium cucumbers, thinly sliced
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 1/4 cup green onions, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 1/4 cup crumbled feta cheese
- 1/4 cup crumbled goat cheese
- 2 tablespoons lemon juice
- 1/2 small red onion, thinly sliced
- 2 tablespoons sesame seeds
- 1 tablespoon sesame oil
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh mint, chopped
- 2 teaspoons chili crisp

Instructions



1. Prepare the Cucumbers:
Place cucumber slices in a large bowl. In a small saucepan over medium heat, combine the rice vinegar, sugar, and salt. Heat, stirring occasionally, until the sugar is dissolved – about 5 minutes. Allow the mixture to cool slightly.

2. Marinate the Cucumbers:
Pour the cooled vinegar mixture over the cucumbers. Let them marinate for at least 15 minutes for the cucumbers to absorb the flavors.

3. Toast Sesame Seeds:
In a dry skillet over medium heat, toast the sesame seeds until golden and fragrant, shaking frequently to avoid burning. This should take about 3 minutes. Remove from heat and set aside to cool.

4. Prepare Additional Ingredients:
In a separate bowl, combine green onions, cherry tomatoes, red onion, fresh cilantro, dill, and mint. Pour in the lemon juice and sesame oil, stirring gently to combine.

5. Assemble the Snack:
Drain the cucumbers from the marinating liquid. In a large serving bowl, toss the cucumbers with the tomato-herb mixture. Add the crumbled feta and goat cheeses, mixing gently to distribute evenly.

6. Final Touches:
Sprinkle the toasted sesame seeds and drizzle the chili crisp over the top. Serve chilled or at room temperature as a refreshing snack.
