Charcoal Grilled Chicken and Pineapple Skewers



Ingredients



- 1 1/2 pounds chicken breast, cut into 1-inch cubes
- 2 bell peppers, cut into 1-inch pieces (red and yellow preferred for color)
- 1 red onion, cut into 1-inch pieces
- 2 cups pineapple chunks, fresh preferred
- 1/3 cup soy sauce
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon lemon juice
- 2 tablespoons brown sugar
- 1 teaspoon freshly grated ginger

Instructions



1. Prepare the Marinade:
- In a large mixing bowl, whisk together soy sauce, minced garlic, olive oil, salt, black pepper, paprika, lemon juice, brown sugar, and grated ginger until the brown sugar is dissolved and all ingredients are well incorporated.

2. Marinate the Chicken:
- Add chicken cubes to the marinade, ensuring each piece is well coated. Cover the bowl and refrigerate for at least 1 hour, up to overnight, to allow flavors to intensify.

3. Assemble the Skewers:
- Remove marinated chicken from the refrigerator. Thread chicken, bell peppers, pineapple chunks, and red onion alternately onto skewers. Ensure each skewer has a variety of ingredients to guarantee a balanced flavor in every bite.

4. Preheat the Charcoal Grill:
- Light charcoal in half of the grill to create a two-zone setup: one with direct heat and another with indirect heat. Allow coals to burn until covered with a thin layer of ash, achieving a moderate heat level.

5. Grill the Skewers:
- Place skewers on the direct heat side of the grill. Turn them frequently for about 10 minutes until nicely charred. Move skewers to the indirect heat side and cover the grill. Cook for an additional 10 minutes or until chicken is cooked through with an internal temperature of 165°F.

6. Serve:
- Remove skewers from grill and let rest for 5 minutes. Serve them hot as an entrée for dinner with a side of grilled vegetables or a fresh salad.
