Spicy Italian Rigatoni with Anchovies and Capers



Ingredients



- 12 ounces Rigatoni
- 2 tablespoons Olive oil
- 1 medium Onion, finely chopped
- 4 cloves Garlic, minced
- 1 teaspoon Italian seasonings
- 1/2 teaspoon Red chili flakes
- One 14-ounce can Canned tomatoes
- 2 tablespoons Tomato paste
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 1 teaspoon Sugar
- 1/4 cup Pecorino cheese, grated
- 1/4 cup Parmesan cheese, grated
- 1/4 cup Capers, rinsed
- 4 Anchovy fillets, chopped
- 1/2 cup Olives, pitted and sliced
- Fresh Basil leaves for garnish

Instructions



1. Boil the Pasta:
- Bring a large pot of salted water to a boil. Add the Rigatoni and cook according to package instructions until al dente. Drain and set aside.

2. Prepare the Sauce:
- In a large skillet, heat the olive oil over medium heat. Add the onions and sauté for about 3 minutes until translucent.
- Add the garlic, Italian seasonings, and red chili flakes. Cook for another minute until fragrant.

3. Simmer with Tomatoes:
- Add the canned tomatoes, tomato paste, salt, black pepper, and sugar to the skillet. Stir well to combine. Simmer for 10 minutes over low heat, allowing the sauce to thicken slightly.

4. Incorporate Premium Ingredients:
- Stir in the grated Pecorino and Parmesan cheeses, ensuring they're evenly distributed throughout the sauce.
- Add the capers, chopped anchovies, and sliced olives. Stir until heated through, about 2–3 minutes.

5. Combine with Pasta:
- Toss the cooked Rigatoni into the skillet, mixing well so the pasta is fully coated with the sauce. Cook for another 2 minutes to allow the flavors to meld.

6. Finalize and Serve:
- Remove the skillet from heat. Garnish with fresh basil leaves before serving.
- Serve hot, ensuring each serving gets a mix of pasta, sauce, and toppings.
