Zesty Oven-Roasted Shrimp & Citrus Salsa Delight
Ingredients
- 1 pound shrimp, peeled and deveined
- 1 lemon, juiced
- 2 limes, juiced
- 2 oranges, peeled and segmented
- 2 large tomatoes, diced
- 2 jalapeños, seeded and finely diced
- 1 red onion, finely chopped
- 1 avocado, diced
- 4 radishes, thinly sliced
- 2 green onions, chopped
- 1 small jicama, peeled and cubed
- 1/2 cup cilantro leaves, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
1. Preheat the Oven:
- Preheat your oven to 400°F (200°C).
2. Prepare the Shrimp:
- In a large bowl, combine the shrimp with the juice of 1 lemon, the juice of 1 lime, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well to ensure the shrimp is evenly coated.
3. Oven Roasting:
- Arrange the marinated shrimp in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 10 minutes or until shrimp is pink, opaque, and cooked through.
4. Prepare the Salsa:
- In a medium-sized mixing bowl, combine the juice of the remaining lime with the orange segments, tomatoes, jalapeños, red onions, avocado, radishes, green onions, jicama, and cilantro.
- Season with the remaining 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
- Gently toss all ingredients to ensure an even mix and set aside.
5. Assemble the Snack:
- Once the shrimp are roasted, remove them from the oven and allow to cool slightly.
- Serve the shrimp alongside generous portions of citrus salsa, garnishing with additional cilantro if desired.
