Creamy Ginger Milk Pudding
Ingredients
- 1/4 cup fresh ginger, grated
- 4 cups whole milk
- 1/2 cup sugar
Instructions
1. Prepare the Ginger:
Place the grated fresh ginger into a fine mesh sieve over a small bowl. Use a spoon to press and extract the ginger juice. You should end up with about 1 tablespoon of fresh ginger juice. Set aside.
2. Heat the Milk:
In a medium saucepan, pour the whole milk. Heat it gently over medium heat. Stir occasionally to ensure it doesn't stick to the bottom of the pan. When the milk starts to steam but before it boils, reduce the heat to low.
3. Add Sugar:
Gradually add the sugar to the milk, stirring continuously until it dissolves completely. This process should take about 2-3 minutes.
4. Steep Ginger:
Remove the saucepan from the heat. Add the freshly extracted ginger juice to the milk and sugar mixture. Gently stir to combine. Allow the ginger to steep in the warm milk for 5 minutes, which will infuse the milk with a rich ginger flavor.
5. Create the Pudding Base:
After 5 minutes, strain the milk mixture through a fine sieve into a separate bowl to remove any ginger solids, leaving you with a smooth liquid.
6. Chill the Pudding:
Pour the strained ginger milk mixture into individual serving bowls or ramekins. Cover them with plastic wrap and refrigerate for at least 2 hours or until the pudding has set.
7. Serve:
Once set, serve the pudding chilled, optionally garnishing with a slice of fresh ginger or a sprinkle of ground ginger for added aroma and presentation.
