Oven-Roasted Pork Tenderloin with Mozzarella-Stuffed Red Bell Peppers and Broccoli
Ingredients
- 1 ½ pounds pork tenderloin
- 2 cups broccoli florets
- 2 large red bell peppers
- 1 cup shredded mozzarella cheese
- 2 tablespoons Italian seasoning
- 1 teaspoon salt
- 2 tablespoons oil (olive or vegetable)
- 3 cloves garlic, minced
- ¼ cup ketchup
- 2 tablespoons balsamic vinegar
- 1 tablespoon brown sugar
Instructions
1. Preheat the Oven:
Preheat your oven to 400°F (200°C).
2. Prepare the Pork Tenderloin:
- Pat the pork tenderloin dry with paper towels.
- Rub the Italian seasoning and salt evenly over the tenderloin.
- Heat 1 tablespoon of oil in a large oven-safe skillet over medium-high heat.
- Sear all sides of the pork tenderloin until browned, about 3-4 minutes per side.
3. Prepare the Red Bell Peppers and Broccoli:
- Cut the tops off the red bell peppers and remove the seeds.
- Stuff each pepper with ½ cup of shredded mozzarella cheese.
- Toss the broccoli florets with 1 tablespoon of oil, salt, and minced garlic in a mixing bowl.
4. Create the Glaze:
- In a small bowl, combine ketchup, balsamic vinegar, and brown sugar.
- Stir until the sugar is dissolved.
5. Assemble for Roasting:
- Place the seared pork tenderloin in the center of the skillet or a baking dish.
- Arrange the stuffed bell peppers and garlic-tossed broccoli around the tenderloin.
- Brush the glaze over the pork tenderloin.
6. Roast in the Oven:
- Transfer the skillet (or baking dish) to the preheated oven.
- Roast for approximately 25-30 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
7. Rest and Serve:
- Remove the skillet from the oven and let the pork tenderloin rest for about 5 minutes before slicing.
- Serve the sliced pork alongside the mozzarella-stuffed peppers and roasted broccoli.
