Decadent Blackberry Cobbler with Ice Cream and Whipped Topping
Ingredients
- 2 cups fresh blackberries
- 1 cup granulated sugar, divided
- 1/2 teaspoon ground cinnamon
- 1 tablespoon cornstarch
- 1 cup water
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 6 tablespoons butter, melted
- 1/2 cup milk
- 1 cup whipped topping
- Ice cream (for serving)
Instructions
1. Prepare the Blackberry Filling:
- In a medium saucepan over medium heat, combine the blackberries, 1/2 cup of granulated sugar, ground cinnamon, and cornstarch. Mix well.
- Add the water and stir continuously until the mixture starts to thicken and becomes bubbly. This should take about 5–7 minutes.
- Once thickened, remove the saucepan from heat and set it aside to cool slightly.
2. Prepare the Baking Dish:
- Preheat your oven to 350°F (175°C).
- Grease an 8x8-inch baking dish with butter or nonstick spray.
3. Create the Batter:
- In a medium mixing bowl, whisk together the flour, baking powder, salt, and the remaining 1/2 cup of sugar.
- Add the melted butter and milk to the dry ingredients. Mix until just combined, ensuring not to overmix.
4. Assemble the Cobbler:
- Pour the batter into the prepared baking dish and spread it evenly.
- Spoon the blackberry mixture gently over the batter, ensuring even distribution. The batter may rise over the fruit while baking, creating a layered effect.
5. Bake the Cobbler:
- Place the baking dish in the preheated oven and bake for 30–35 minutes, or until the top is golden brown and a toothpick inserted into the biscuit layer comes out clean.
6. Serve and Enjoy:
- Once baked, remove the cobbler from the oven and let it cool for 5–10 minutes.
- Serve warm with a dollop of whipped topping and a scoop of your favorite ice cream.
