Ultimate Mushroom and Spinach Risotto
Ingredients
- 1 cup Arborio rice
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 8 ounces cremini mushrooms, sliced
- 4 cups vegetable broth
- 1 cup fresh spinach leaves
- 1/2 cup grated Parmesan cheese
- 1/2 cup dry white wine
- 2 tablespoons unsalted butter
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
1. Prepare the Broth:
- In a medium saucepan, heat the vegetable broth over medium-low heat until warm. Maintain a gentle simmer throughout the cooking process.
2. Sauté Aromatics:
- In a large skillet, heat olive oil over medium heat.
- Add the finely chopped onion and sauté for 2-3 minutes, or until translucent.
- Add the minced garlic and continue to sauté for 1 minute, making sure not to burn the garlic.
3. Cook the Mushrooms:
- Add sliced cremini mushrooms to the skillet.
- Sauté them for 5-7 minutes until they release their moisture and become golden brown.
4. Toast the Rice:
- Add Arborio rice to the skillet, stirring to coat each grain with the oil and mushroom mixture.
- Toast the rice for about 2 minutes.
5. Deglaze and Cook:
- Pour in the dry white wine, stirring continuously until the wine is mostly absorbed by the rice.
- Begin adding the warm vegetable broth one ladle at a time, stirring frequently.
- Allow each ladle of broth to be absorbed before adding the next. This process should take about 18-20 minutes.
6. Finish with Spinach and Cheese:
- Once the risotto is creamy and the rice is cooked al dente, add the fresh spinach leaves. Stir until wilted.
- Remove the skillet from heat. Stir in grated Parmesan cheese and unsalted butter until well combined.
- Season with salt and pepper to taste.
7. Serve:
- Divide the risotto among plates. Garnish with freshly chopped parsley and an extra sprinkle of Parmesan cheese if desired. Serve immediately for best results.
