Sweet and Tangy Baked Chicken with Pineapple and Peppers
Ingredients
- 4 boneless, skinless chicken breasts
- 2 medium bell peppers, sliced
- 1 large red onion, sliced
- 1 cup pineapple chunks (fresh or canned, drained)
- 3 cloves garlic, minced
- 1/4 cup brown sugar
- 1/4 cup rice vinegar
- 1/4 cup soy sauce
Instructions
1. Preheat the Oven: Preheat your oven to 375°F (190°C).
2. Prepare the Chicken: Place the chicken breasts in a baking dish, ensuring they are evenly spaced.
3. Combine the Marinade: In a medium bowl, combine minced garlic, brown sugar, rice vinegar, and soy sauce. Stir until the sugar is dissolved, creating a smooth sauce.
4. Assemble the Dish: Arrange the sliced bell peppers, red onion, and pineapple chunks evenly over and around the chicken breasts in the baking dish.
5. Pour the Sauce: Pour the soy sauce mixture evenly over the chicken and vegetables. Use a spoon to ensure the chicken is well-coated with the sauce.
6. Bake: Cover the dish with aluminum foil and place it in the preheated oven. Bake for 30 minutes, then remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and juices run clear. The internal temperature of the chicken should reach 165°F (74°C).
7. Broil for Extra Flavor: Turn the oven to broil and broil the dish for 3-5 minutes or until the chicken and vegetables have a slight caramelization for added depth of flavor.
8. Serve: Remove the dish from the oven and let it rest for 5 minutes before serving. Serve each chicken breast with a generous portion of baked vegetables and pineapple, spooning extra sauce over the top.
