Crispy Baked Cucumber Chips with Mustard and Red Pepper



Ingredients


- 2 large cucumbers, thinly sliced
- 1 tablespoon sea salt
- 1 teaspoon mustard seeds
- 1 tablespoon dehydrated red bell peppers, crushed

Instructions



1. Preheat Your Oven
Preheat your oven to 275°F (135°C).

2. Prepare the Cucumbers
Slice the cucumbers as thinly as possible, ideally using a mandoline slicer for uniformity. This will ensure even cooking and maximum crispiness.

3. Salting the Cucumbers
Place the cucumber slices in a large bowl. Sprinkle with sea salt, gently tossing to ensure even distribution. Let the cucumbers sit for about 15 minutes to draw out excess moisture.

4. Pat Dry
After 15 minutes, rinse the cucumber slices under cold water to remove excess salt. Pat them dry thoroughly with paper towels.

5. Seasoning
In a small mortar and pestle, lightly crush the mustard seeds to release their flavor. Combine the crushed mustard seeds with the crushed dehydrated red bell peppers.

6. Flavorful Coating
Sprinkle the mustard and red pepper mixture evenly over the cucumber slices, tossing gently to coat.

7. Arrange on Baking Sheet
Line a baking sheet with parchment paper. Spread the cucumber slices in a single layer, ensuring there’s no overlap.

8. Baking
Place the baking sheet in the preheated oven. Bake for 45 minutes, flipping the slices halfway through. Check for desired crispiness; bake an additional 10-15 minutes if necessary.

9. Cool and Serve
Remove from the oven and allow to cool on the baking sheet. The chips will continue to crisp up as they cool. Once fully cooled, transfer to a serving bowl and enjoy as a crunchy snack.
