Grilled Olive & Blue Cheese Skewers with Prosciutto and Mozzarella
Ingredients
- 1 1/2 cups grilled pitted green olives
- 2 tablespoons olive oil
- 4 ounces blue cheese, crumbled
- 1/2 cup roasted pimento peppers, diced
- 1 tablespoon red wine vinegar
- 1 teaspoon lemon peel, finely grated
- 2 sprigs fresh rosemary
- 2 cloves garlic, minced
- 8 slices prosciutto
- 8 marinated artichoke hearts, halved
- 16 small mozzarella balls
Instructions
1. Prepare the Grill:
Preheat your charcoal grill to medium-high heat, preparing a two-zone cooking area for both direct and indirect heat.
2. Make the Olive Filling:
In a bowl, combine the grilled green olives, crumbled blue cheese, diced pimento peppers, red wine vinegar, lemon peel, minced garlic, and olive oil. Mix well to ensure all ingredients are coated with the oil and seasonings.
3. Prepare the Skewers:
Take a slice of prosciutto and lay it flat on a clean surface. Place one marinated artichoke heart at one end of the prosciutto, then add a spoonful of the olive mixture and a mozzarella ball.
4. Assemble Skewers:
Roll the prosciutto tightly around the fillings and skewer it with a rosemary sprig, securing the roll at each end. Repeat the process until all ingredients are used up.
5. Grill the Skewers:
Place the skewers over indirect heat first and let them grill for about 5 minutes to warm the insides. Then, move them to direct heat and grill for an additional 2-3 minutes per side until the prosciutto is crisp and the cheese is starting to melt slightly.
6. Serve:
Remove from grill and allow to cool for a minute. Serve immediately as a gourmet snack, drizzling a little extra olive oil and garnishing with fresh rosemary if desired.
