Crispy Parmesan Zucchini Fries
Ingredients
- 2 medium zucchinis
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray or 2 tablespoons olive oil
Instructions
1. Preheat Your Oven
Preheat your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it with olive oil.
2. Prepare the Zucchini
Wash and dry the zucchinis. Cut each zucchini in half lengthwise, then slice each half into fry-like sticks about 1/2 inch thick.

In a shallow dish, place the all-purpose flour. In a second dish, beat the eggs. In a third dish, combine the breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.

Dredge each zucchini stick in the flour, shaking off any excess. Dip it into the beaten eggs, ensuring it's completely coated, and let any excess drip off. Finally, press and roll the zucchini in the breadcrumb mixture, ensuring an even coating.

Place the coated zucchini sticks on the prepared baking sheet in a single layer. If using olive oil, drizzle it over the top or lightly spray with the cooking spray for added crispiness.
6. Bake the Fries
Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the zucchini fries are golden brown and crispy on both sides.
